Singapore’s First Macrobiotic Service – Course Information November 29, 2008

Simone Vaz is a macrobiotic counsellor who began eating and cooking macrobiotically when first diagnosed with breast cancer in 2006. She has studied – and continues to share experiences – with renowned, pioneering macrobiotic practitioners in the US. Her recommendations are based on her own personal experiences of the diet, as well as the collective experiences of her clients and the knowledge of other macrobiotic counsellors and practitioners. She is therefore able to work more effectively with patients because she is able to understand their cancer journeys.

While the entry of point of the macrobiotic lifestyle begins with a new approach to eating for many people, Simone believes that the emotional journey that comes with such a fundamental lifestyle change also needs to be supported. Her style of counselling involves working with the whole person to bring them to a more rewarding, joyful and delicious practice of macrobiotic eating and living.

In the tradition of macrobiotics, all teaching takes place in the home of the counsellor. Much of the learning of macrobiotic is based on personal practice and experiential knowledge transfer – no two bodies are alike and the practice of macrobiotics is at its most effective when there is a sharing of personal experiences in small group sessions.

All classes, unless otherwise stated, take place in Lusher Than Life Macrobiotic House. In some cases, such as for cooking classes and counselling sessions, payment should be made in advance to confirm bookings.

Courses and Fee Schedule

1.“Life is Delicious’ Cooking Classes

This option is only offered to clients who have been through either a macrobiotic Healing Consultation, or a Transitioning to Macrobiotics consultation. If this cooking class is booked at the same time as the consultation, a package rate applies.

Each class is highly tailored to the client’s health condition and cooking skills, but a typical class could cover:

  • Developing a meal menu based on what is available in the kitchen
  • Macrobiotic larder audit – where the client’s ingredients are reviewed and recommendations are made as to their use, and suitability for the client’s condition
  • How to prepare special macrobiotic remedies suitable for your condition/ cooking recipes from the mainstream diet adapted for macrobiotics
  • Cooking with seaweed
  • Preparing miso soup

In these classes, the client (or the client’s domestic helper, supervised by the client) prepares the food with the help of Simone, so that they understand how a typical macrobiotic meal is prepared and should be seasoned.

2. The Macrobiotic Healing Consultation Package

This includes the healing consultation, six weekly consultations / teaching phone calls + 1 optional cooking class (see outline in item 1).

This package is suitable for those who are trying to heal from a health condition or who want to support themselves as they take medical treatment for illnesses such as cancer.

This package will provide:

  • A diagnostic questionnaire in which clients will provide their health history
  • A lifestyle and eating recommendations booklet with over 100 recipe combinations, including healing dishes and remedies
  • A face to face meeting with Simone Vaz (can be done at the same time as cooking class, if preferred)
  • Six weekly macrobiotic phone consultations / teaching sessions during which the client’s reaction to the diet, cravings, and menu plans are reviewed and discussed

Macrobiotic menu planning is quite a challenge, especially if the person is going through medical treatment. A key concept in macrobiotics is balancing the energetic value of the food being consumed, as well as the native energetic balance of the person and the type of lifestyle challenges he may be going through. The menu plan must support all of this and because one or more elements are changing all the time, it is important that the person understands how to adapt the diet based on these changes. The phone calls teach clients how to do this so that they can make good food choices for themselves for the rest of their lives.

3. The Transitioning to Macrobiotics Consultation Package

This includes the consultation, three weekly consultations / teaching phone calls + 1 optional cooking class (see outline in item 1).

This package is suitable for those in good health and who want to begin adopting macrobiotic lifestyle practices for themselves and for their families.Unlike the healing diet, where the dietary and lifestyle practices tend to be much stricter, this package teaches people basic macrobiotic concepts and the recipes provided include foods and deserts which are not part of the Macrobiotic Healing Diet.

This package will provide:

  • A diagnostic questionnaire in which clients will provide their health history
  • A lifestyle and eating recommendations booklet with over 100 recipe combinations including cakes, cookies, breads, and other exciting dishes from mainstream diets adapted to a macrobiotic practice
  • A face to face meeting with Simone Vaz (can be done at the same time as cooking class, if preferred)
  • Three weekly macrobiotic phone consultations / teaching sessions during which the client’s reaction to the diet and menu plans are reviewed and discussed

As with the Healing Consultation Package, the phone calls will teach the client the basics of food balancing, and how to listen to the voice of their bodies, so that they will be able to make good food choices for themselves and their families.

4. Personal Strengths and Resilience Coaching

This package comprises seven one hour coaching sessions and is for anyone who feels they need help with personal issues. The coaching sessions are delivered by Simone Vaz, who has been certified in neuroscience coaching by the Neuro Leadership Group, which works by helping people re-set their thinking by first leading them to moments of keen insight to their situation.

While this is a highly customised service that focuses on the individual’s needs and life situation, there are some areas we would typically touch on during the discussion.

The typical coaching package includes:

  • Session to agree aims and objectives of the coaching engagement
  • Self-assessment questionnaires, including the Portrait of Personal Strengths assessment from Strengths Publishing Inc
  • Goal-setting, developing personal action plans and strategies
  • Creating powerful intentions and making personal changes
  • Prioritising values
  • Positive problem solving and challenging limiting beliefs
  • Celebrating acomplishments

Depending on the client’s needs, other elements can be brought in, including behavioral conflict resolution, modelling, self-discovery and awareness.

While the coaching can deal with a range of issues, the typical issues that tend to come up include: financial management, work-life balance, stress reduction, time and change management, problem solving, relationship building and conflict resolution, career management and dealing with life changes and challenges.

For those facing a dread illness diagnosis, the coaching package is designed to help people deal with the diagnosis and the effects and challenges of medical treatment and the life changes that the person is going through.  In essence, the coaching sessions are intended to help people manage their emotional and mental well-being so that they reduce the risk of any imbalance manifesting on the physical body.

If clients prefer, an initial face to face coaching session can be arranged for a fee of $60-00, where the client can assess if they want to work with our coach.

5. Macrobiotic Talks

These are short two-hour talks that are intended to provide people with value-added knowledge of the macrobiotic practice, healing health issues naturally, and key concepts in macrobiotic thinking. They also provide people with opportunities to meet other like minded people and share on their respective health journeys. Some of the topics covered during these talks include: the relationship between diet and cancer – reviewing the latest nutritional research; TCM concepts (such as the Five Elements Theory and macrobiotics); and, managing diabetes and hypoglycemia, mental and emotional healing beyond food, finding healing and positivity with every day foods, the yin and yang of food, and the women’s health and macrobiotics.

The talks are usually held in the East coast area and notification of these are on the website, so check back often!
