Singapore’s First Macrobiotic Service – Course Information November 29, 2008

Simone Vaz is a macrobiotic counsellor who began eating and cooking macrobiotically when first diagnosed with breast cancer in 2006. She has studied – and continues to share experiences – with renowned, pioneering macrobiotic practitioners in the US. Her recommendations are based on her own personal experiences of the diet, as well as the collective experiences of her clients and the knowledge of other macrobiotic counsellors and practitioners. She is therefore able to work more effectively with patients because she is able to understand their cancer journeys.

While the entry of point of the macrobiotic lifestyle begins with a new approach to eating for many people, Simone believes that the emotional journey that comes with such a fundamental lifestyle change also needs to be supported. Her style of counselling involves working with the whole person to bring them to a more rewarding, joyful and delicious practice of macrobiotic eating and living.

In the tradition of macrobiotics, all teaching takes place in the home of the counsellor. Much of the learning of macrobiotic is based on personal practice and experiential knowledge transfer – no two bodies are alike and the practice of macrobiotics is at its most effective when there is a sharing of personal experiences in small group sessions.

All classes, unless otherwise stated, take place in Lusher Than Life Macrobiotic House. In some cases, such as for cooking classes and counselling sessions, payment should be made in advance to confirm bookings.

Courses and Fee Schedule

1.“Life is Delicious’ Cooking Classes

This option is only offered to clients who have been through either a macrobiotic Healing Consultation, or a Transitioning to Macrobiotics consultation. If this cooking class is booked at the same time as the consultation, a package rate applies.

Each class is highly tailored to the client’s health condition and cooking skills, but a typical class could cover:

  • Developing a meal menu based on what is available in the kitchen
  • Macrobiotic larder audit – where the client’s ingredients are reviewed and recommendations are made as to their use, and suitability for the client’s condition
  • How to prepare special macrobiotic remedies suitable for your condition/ cooking recipes from the mainstream diet adapted for macrobiotics
  • Cooking with seaweed
  • Preparing miso soup

In these classes, the client (or the client’s domestic helper, supervised by the client) prepares the food with the help of Simone, so that they understand how a typical macrobiotic meal is prepared and should be seasoned.

2. The Macrobiotic Healing Consultation Package

This includes the healing consultation, six weekly consultations / teaching phone calls + 1 optional cooking class (see outline in item 1).

This package is suitable for those who are trying to heal from a health condition or who want to support themselves as they take medical treatment for illnesses such as cancer.

This package will provide:

  • A diagnostic questionnaire in which clients will provide their health history
  • A lifestyle and eating recommendations booklet with over 100 recipe combinations, including healing dishes and remedies
  • A face to face meeting with Simone Vaz (can be done at the same time as cooking class, if preferred)
  • Six weekly macrobiotic phone consultations / teaching sessions during which the client’s reaction to the diet, cravings, and menu plans are reviewed and discussed

Macrobiotic menu planning is quite a challenge, especially if the person is going through medical treatment. A key concept in macrobiotics is balancing the energetic value of the food being consumed, as well as the native energetic balance of the person and the type of lifestyle challenges he may be going through. The menu plan must support all of this and because one or more elements are changing all the time, it is important that the person understands how to adapt the diet based on these changes. The phone calls teach clients how to do this so that they can make good food choices for themselves for the rest of their lives.

3. The Transitioning to Macrobiotics Consultation Package

This includes the consultation, three weekly consultations / teaching phone calls + 1 optional cooking class (see outline in item 1).

This package is suitable for those in good health and who want to begin adopting macrobiotic lifestyle practices for themselves and for their families.Unlike the healing diet, where the dietary and lifestyle practices tend to be much stricter, this package teaches people basic macrobiotic concepts and the recipes provided include foods and deserts which are not part of the Macrobiotic Healing Diet.

This package will provide:

  • A diagnostic questionnaire in which clients will provide their health history
  • A lifestyle and eating recommendations booklet with over 100 recipe combinations including cakes, cookies, breads, and other exciting dishes from mainstream diets adapted to a macrobiotic practice
  • A face to face meeting with Simone Vaz (can be done at the same time as cooking class, if preferred)
  • Three weekly macrobiotic phone consultations / teaching sessions during which the client’s reaction to the diet and menu plans are reviewed and discussed

As with the Healing Consultation Package, the phone calls will teach the client the basics of food balancing, and how to listen to the voice of their bodies, so that they will be able to make good food choices for themselves and their families.

4. Personal Strengths and Resilience Coaching

This package comprises seven one hour coaching sessions and is for anyone who feels they need help with personal issues. The coaching sessions are delivered by Simone Vaz, who has been certified in neuroscience coaching by the Neuro Leadership Group, which works by helping people re-set their thinking by first leading them to moments of keen insight to their situation.

While this is a highly customised service that focuses on the individual’s needs and life situation, there are some areas we would typically touch on during the discussion.

The typical coaching package includes:

  • Session to agree aims and objectives of the coaching engagement
  • Self-assessment questionnaires, including the Portrait of Personal Strengths assessment from Strengths Publishing Inc
  • Goal-setting, developing personal action plans and strategies
  • Creating powerful intentions and making personal changes
  • Prioritising values
  • Positive problem solving and challenging limiting beliefs
  • Celebrating acomplishments

Depending on the client’s needs, other elements can be brought in, including behavioral conflict resolution, modelling, self-discovery and awareness.

While the coaching can deal with a range of issues, the typical issues that tend to come up include: financial management, work-life balance, stress reduction, time and change management, problem solving, relationship building and conflict resolution, career management and dealing with life changes and challenges.

For those facing a dread illness diagnosis, the coaching package is designed to help people deal with the diagnosis and the effects and challenges of medical treatment and the life changes that the person is going through.  In essence, the coaching sessions are intended to help people manage their emotional and mental well-being so that they reduce the risk of any imbalance manifesting on the physical body.

If clients prefer, an initial face to face coaching session can be arranged for a fee of $60-00, where the client can assess if they want to work with our coach.

5. Macrobiotic Talks

These are short two-hour talks that are intended to provide people with value-added knowledge of the macrobiotic practice, healing health issues naturally, and key concepts in macrobiotic thinking. They also provide people with opportunities to meet other like minded people and share on their respective health journeys. Some of the topics covered during these talks include: the relationship between diet and cancer – reviewing the latest nutritional research; TCM concepts (such as the Five Elements Theory and macrobiotics); and, managing diabetes and hypoglycemia, mental and emotional healing beyond food, finding healing and positivity with every day foods, the yin and yang of food, and the women’s health and macrobiotics.

The talks are usually held in the East coast area and notification of these are on the website, so check back often!

Our services are aimed at giving people the tools and knowledge they need to live their lives to the fullest, with health, joy and abundant appreciation. Apart from consultations on the macrobiotic diet, Lusher Than Life also provides coaching in resilience and personal strengths. We also hold occasional talks and forums on macrobiotics and living in balance, both from food and an energetic perspective.

In recent oncology literature, we know that there is a growing focus and scientific inquiry on the relationship between physical and mental health. Psychoneuroimmunology is now studying how this relationship can be leveraged so that we can use our mental faculties to ‘think’ ourselves to better health. However, if you are a student of macrobiotics, you would not be surprised at this. Macrobiotics has been talking about balance on the physical, mental and energetic plane for thousands of years – and now, once again, science is proving macrobiotics right!

‘Life is Delicious’ cooking classes

Fee: $200-00 (for three hours, not including ingredients)

These classes are conducted for those who have been through the macrobiotic healing or transition consultation and are intended to make sure that the right ingredients have been purchased or substituted, and that you understand the basic macrobiotic cooking techniques. Simone will visit your home to audit your macrobiotic larder and to understand how you are cooking the recipes that were provided in the Lusher Than Life macrobiotic recommendations book. Together, you will cook several macrobiotic dishes that are particularly key to your healing, using the ingredients you already have available at home. During the cooking lesson, you will be able to ask questions and clarify the recommendations provided in the recommendations booklet. If it is necessary for us to provide the vegetables, this will be charged on a cost recovery basis – estimates for the ingredients will be provided and will  only be bought with the client’s agreement.

Macrobiotic Healing Consultations

Fee: $550-00 (without cooking class) / $725-00 (with one three hour cooking class in client’s home. Available if booked as a package with healing consultation)

The healing consultations are the chief service provided by Lusher Than Life. Working with people with health issues, ranging from cancer, to liver cirrhosis, to rheumatoid arthritis, the healing consultations are a guided process where the client fills in a health questionnaire and then, based on the information in the questionnaire, is provided with a 70-page, A4-size book with comprehensive information on the basics of a macrobiotic lifestyle, information about key macrobiotic concepts, bespoke lifestyle and eating recommendations tailored specifically to the person’s s needs, as well as six weeks of weekly consulting phone calls to guide the client as they begin to cook the food, and transition to the macrobiotic way of living. The phone calls have no time limit and are intended as teaching sessions to give the client a deeper understanding of macrobiotics, how the diet helps to support optimal immune functioning, and most importantly, how the client can recognise the signals that the body is giving him and to then adjust the diet to respond to these signals so that he will always be able to keep his body in a state of energetic balance. Consulting cancer survivors in particular will require the full six weeks of macrobiotic teaching phone calls, especially if they are taking chemotherapy or other medical intervention, because they require comprehensive and extensive support as the diet is adapted as their bodies react to the treatment.

Each phone consultation is based on a food diary that the client will be asked to keep, so that their reactions to the food can be discussed during the calls. Each person’s body and reaction to the food is different and usually some form of minor modification is required so that we have macrobiotic diet that is highly specific to the client’s condition.

At the end of the six weeks of phone consultations, the client will be able to practice macrobiotics on his own and to make good food choices for the rest of his life.

While not absolutely necessary, clients are encouraged to take up the cooking class cum kitchen audit package as well. This will help them understand better the basic food preparation styles and seasoning rules. Most importantly, it will provide enough of an understanding of the diet so that delicious meals can be prepared. Joyful and appreciative eating is a cornerstone of the journey back to health. While macrobiotic food is not difficult to prepare, it does take some practice because unlike cooking in the standard modern diet, macrobiotic practitioners rely on the different ingredients to give the food depth and flavour, rather than layering on seasonings. Without this understanding, people new to macrobiotics will find themselves cooking food that is less than delicious. This would be such a pity, given that nature’s bounty is so varied such that one can concoct delicious meals simply by selecting the right ingredients in combination to provide a simply yummy meal!

Transitioning to Macrobiotics Consultation

Fee: $400-00 (without cooking class) / $575-00 (with one three hour cooking class in client’s home. Available if booked as a package with Transitioning consultation.)

This package is for people who want to learn to adopt healthier food choices for themselves and their families. The process is similar to that of a healing consultation. The client goes through the health questionnaire and also receives the macrobiotic 70-page Lusher Than Life recommendations book to support their lifestyle. The macrobiotic approach to eating is usually less strict for people without health issues, and because they are able to eat more widely, we will not need the full complement of six weeks of consultation and teaching phone calls for the client effectively transition to the diet. In this package, there are three phone consultation that are intended to teach the basic concepts of the macrobiotic diet. Like the healing diet, each phone call is based on a food diary that the client will be required to keep so that the weekly food intake can be reviewed and adjustments made so that the client will understand through the recommendations and the teaching how to balance their food intake to keep them in optimal  health.

Again, while the cooking class is not critical, it is always useful to see how delicious well-prepared macrobiotic meals can be, especially with macrobiotic desserts and baked goods that can occasionally be consumed by macrobiotic practitioners in good health.


Personal Strengths and Resilience Coaching

Fee: $700-00 per block of seven coaching conversations

This is a structured coaching engagement available in blocks of seven coaching conversations, each lasting approximately 60 minutes. The conversations take place over the phone so there is no need for the client to travel – this, however, does not compromise the effectiveness of the coaching engagement. Using a brain-based, or neuroscience approach, the coaching helps clients to identify his or her strengths and passions, and supports the journey towards building a new and more positive life-view, where the client feels that he is in the driver’s seat, and is fully in control over his life and the events that come into it. The brain-based approach provides a personally transformative experience, where our thinking and perspectives are rewired through a series of powerful coaching conversations that help clients take back their personal power. The process is led by the client, not the coach, who simply is a supportive facilitator.

The coaching approach is particularly useful for people facing challenges, issues or who feel that they are stuck and cannot seem to see a way forward that they are willing to take.  It helps people redefine and reconnect with their dreams for themselves and their life purpose.

Very often, with a dread illness or a critical condition, one is very much led by the medical community. One result of this for some people is the sense of helplessness. In her work as a macrobiotic counsellor, especially with people who are dealing with the diagnosis of a dread illness, Simone has found that a positive frame of mind can make the difference in how well someone takes medical intervention and the accompanying life challenges.

This coaching helps clients re-frame their life experiences so that the find their core of strength and personal resilience, and are able to better cope with the situation.
